Today the Cooperative uses two main methods of vinification. Traditional fermentations begin when the bunches are destemmed at the winery. Alternatively, the bunches may be kept in tanks to permit them to undergo carbonic maceration before pressing and a low-temperature fermentation.

Like all wines, those of the Cooperative of Masroig are children of the lands that bear them. Children also of the men and women who make them following a millenarian tradition with the aid, today, of technologies which can guarantee the quality that the market demands. Children, finally, of a landscape and a way of life, of the heart of a land with its own identity.
